I've had a number of intermittent symptoms on the list of Covid symptoms long before the pandmemic started... loose stools as a result of my favorite foods, dysgeusia, bronchial congestion to name a few... some of which go back to early 2019. Aside from testing, is there a way I tell if any symptoms which are not "new" are due to my pre-existing condition or something else?

The gastrointestinal symptoms that you describe warrant consultation with a gastroenterologist (GI doctor). The fact that they existed prior to the pandemic suggests that you may have an underlying problem which a GI doctor may be able to help you with.
