My husband and I had covid at the beginning of October. We were just with our adult son who tested positive this morning. We are hosting Thanksgiving and wonder if we have immunity or if we could potentially spread it to others.

Your recent infections may give you some partial protection but not 100% protection.  Vaccination also does not provide 100% protection.  You can still get infected again. Infections have been observed 28 days apart. Your adult son is probably a risk to any indoor gathering.
