Given the rise of Delta, is it safe to fly right now to see my 85 year old parents? They are in the high risk category and have not yet had a booster shot; I'm concerned about giving them something and getting sick myself.

Flying safely may be done if you have been fully vaccinated, maintain your mask as much as possible, and minimize your risks of exposure in the week leading up to your flight.  Being fully vaccinated combined with masking and physical distancing during your flight will be as important as minimizing your contacts with others in the week or two weeks before your travel.
